The Pastry Pack (optional) includes a speed variator and an electric damper, offering precise control over ventilation and moisture extraction. Combined with the Smart Control and the Fine Crust system, this equipment allows you to precisely adjust the baking of sensitive products such as macarons, meringues, or choux pastry, for consistent, high-quality results.

CONSISTENCY & PERFORMANCE
The design of the cooking chamber ensures even circulation of hot air throughout, thanks to four turbines positioned on the rear wall. The chamber’s high-performance insulation limits heat loss and improves energy efficiency. The steam injection system guarantees dense, saturated steam, ensuring consistent shine on all levels.

FINE CRUST SYSTEM
The Fine Crust system is based on a natural airflow principle that accelerates and controls moisture removal. Dry air enters the baking chamber and pushes the humid air toward the vent. Adjustable during baking and adaptable to the oven load, this air flow allows for controlled drying of the dough, promoting even coloring and a thin, welldeveloped, and uniform crust.
